I have seen clay used to check clearance. Seems you could fill the head around the valves bolt it all together, rotate the engine a couple times by hand then pull head and measure what thickness clay is left. You could in theory romove a little less than the clearance measurements. Might also want to account for valve lash which I believe will in turn account for the difference when the engine is warm.
