George and Tim say that 2 or even 3 1-bbl carbs are best, because they say that a single carb in the middle of the engine, with multiple barrels, will tend to over-feed the middle two cylinders and under-feed the front and back ones, causing reduced power output from all six cylinders (a bit too rich in the middle ones and a bit leaner than ideal in the front and rear ones) - i.e., reduced in comparison to the power output that you'd get with multiple carbs that provide more even distribution of fuel. I dunno, I suppose it makes sense.
