Several years back had the exact same thing happen.(on a 360 no less) my 17 yrold son(first build) set the main caps while the engine was on the stand, and tourqued them to 70lbs. had no. 4 cocked some and went ahead and put the oil pan on. oil pressure was at 60 lbs. at start-up but within seconds went to 20 lbs. Kasey and I were out by the engine when it started and the wyfe was watching the guage, and turned the motor off. long story short, back out on the stand we found it, and set the cap down solid, tourged it and was okay. on a brand new engine the problem with going thru all the other options first, is that if it is a bearing, somewhere in the motor every time the motor is started to check, something is going to suffer big time. better to find the problem on the stand than to keep trying different stuff till you lose the motor and your money. I truly hope that it is something very simple and easy to fix, and not a turned bearing or something bad. good luck. Dave.
