I'm no chemist, but any liquid will get acidic when exposed to heat/condensation etc. That's why you should run your engine at least 5 mins. before shutting it off and why short trips kill an engine. Condensation and acids do not have a chance to get 'burned off' and evaporated. The same thing is bound to happen to brakes over time, except their is no way to "burn" off the acids/condensation. DOT 5 helps prevent this, but regular maintenace and changing of fluids will do the trick.
