I would second the stroked 440, as that would be the most bang for the buck. You can build a stock 440 to 350 reliable horsepower with a ton of low end, plus you wouldn't have to search out a Caterpillar dealership for parts (expensive parts at that!)...
The 2408 was a small diesel in the caterpillar line in the '70's when I worked on that sort of thing. They were found in 5 ton or larger Fords and some IH's. I do not know if the engine is still being built... It is about 6" wider than a big block Chrysler. They also built a 2406...
I know of a friend that stuffed a Detroit 6V-71 in the nose of a 1 ton Chevy dually... THAT was a tight fit...
