If it boils over, as ethanol lends it towards doing, the intake manifold will become saturated with fuel. Holding the throttle plates open helps to burn the filthy-rich situation created in the intake manifold. On our several 383s with AFBs, we hold the pedal down ~1/2" for hot starts. That lets air in without the accelerator pump making the situation too much worse.
