Sounds like you have found a real nice truck and hopefully we will be able to answer some of your questions. The locking front hubs are a nice feature which can be rather difficult to find if one breaks, as are most of the parts for the front axle. The standard axle ratio is 6.8:1 front and rear, the 318 puts out just over 200 hp and you can expect that 55 mph is about the top end for highway driving. The 318 should give you plenty of power for most chores unless you really want to push the load capacities, and changing engines will probably not get you any greater speed without gearing changes. Changing axle ratios could be a problem as I do not know of any other ratios available for both axles. The stock wheel size is 20" and most trucks seem to be running either 8.25x20 or 9.00x20 tires. The idea of a two-speed rear end is the first I have heard of in a four wheel drive, they usually use the two-speed transfer case if lower gears are required. The GVWR for these trucks is usually about 19,000 lbs and there are two standard wheelbases, 157" and 175". Hope this helps, good luck with your decision.
