Here's a couple thoughts: Rear brakes only contribute about 30% of braking unless heavily loaded, so smaller disc brakes, or the original drum brakes, are adequate for these trucks.
Since you already have big disc brakes in the back, I would tend toward Option 1. It seems to be less complicated and less expensive, and keeps the truck a little narrower. I would think the longer stud extensions are plenty strong enough for this application. It also keeps the wheel combo closer to the track centerline of the hub, reducing stresses on the spindle a little bit.
