If I was re-building a truck from scratch like you're doing, I would definitely add a ~2kW hard-wired inverter and an AC outlet. I would try to find a cool spot for it, but near the battery. Be aware that most inverters produce a waveform that's symmetrical around ground, so there isn't really a neutral in the conventional sense. If you try to ground the wide pin, thinking it's neutral, you'll short out one side of the inverter. With a remotely-located inverter, I would open it up and replace the built-in on/off switch with a remote one so I could switch it off from inside the cab. Either that or a big-*ss contactor in the DC lead.
