Another possibility.
DOT3 is hydroscopic....that means that is absorbs water. Hydraulic fluid doesn't compress much, but water does....therefore the spongy feel to the pedal.
Whether it's air or water, bleed the system, completly.
If it was water, it could have collected in the low points and started some rust.
