The cylinder walls should have a roughly 45 degree pattern called a "cross hatch" which, supposedly, holds oil better.
More important, I think, is that moving the hone in and out to produce the cross hatch pattern prevents any irregularities in the stone from wearing into the cylinder. Since the stone on the hone is not usually trued, moving the hone in and out evens out the wear.
