1966 wm300 rpm

I have been driving the PW often and getting more comfortable with higher rpms. My speedometer does not work, I guess at my speeds, although I have had a gps clock at 54 mph. 1100x16 5.83 freshly rebuilt 251. I have been thinking of getting a tachometer so I would know what rpm the engine is turning. At 45-50 mph there is a lot of pedal left and if pushed on the truck gains speed very quick. I don't wont to over rev the engine. What rpm would yield the best mpg? Thanks for all the help Ya'll.
