There are two ways to about this.
1. Get all your receipts together and add up the costs for the truck and parts. You can value your time as $0 or anything else. It's a hobby and you work on it for the enjoyment of it and not to profit from it.
2. If your soon to be ex is claiming more have them to prove it with a professional appraisal, and have them foot the bill for if. If you don't like the number they come up, get a professional appraisal for lower value (make sure to tell the appraiser thats it not for insurance purposes, it for legal that ones to show it's value is not as high as other may think). Appraisals for insurance values are crazy high. Jewelry is routinely appraised at twice is purchase price if not more. They do this so that you feel good that you about what you bought and so insurance companies can charge you a higher premiums.
