If you can find a parts truck with a legible frame number and matching VIN, it would be a lot easier to register.

Remember, there are some differences in the frame between those with the 230 and 251 engines.

I actually think that you will be time, money and effort ahead by buying a complete truck and selling the extra parts you have. Piecing together a new truck from your pile of parts is probably another one of those ideas that sounds good, but is not really practical.
