I have broken plenty of cable, chain, and hooks while winching. I have never been threatened by a cable break. It's the chain and hook breaks you want to watch out for. If you have the correct shear pin and are using good quality chain, cable and hooks, equal to the requirements of the job, you will not need to duck behind the dash.
One simple trick is to bring along an old, heavy jacket or tarp and wrap it around the chain/snatch block connection. This helps to slow down and shorten the ballistics if something does break. But I have never done this, myself.
