Well, not adjustable vertically, but I picked up an 8-ton pintle/ball combo from Northern Tool. I believe JC Whitney sells the same unit.
This looks like a standard pintle hitch, but the top clamps down on a ball. I ordered mine with a 2" ball, but seperate balls are available.
Once the black paint and chrome ball were pained with olive drab, no one notices until they look closely (it's on my M37).
Doesn't solve your height adjustment, but otherwise it is a simple solution.
