Not sure about the lanterns, but on the stoves, you replace the whole "generator", which is the long tube with a spiral coil inside it and a needle valve at the far end that vaporizes the gas. There's no way to replace individual parts of the needle valve. In my experience, most of them (lanterns and stoves) tend to leak slightly even when shut off, so rather than keep futzing with it, I just make sure the flame is out, and then crack the fuel cap enough to let the pressure out.
