Don't see why it wouldn't work. You might want to still drill the mounting holes to help support the plate I'd think, but no reason to drill the large hole for the clutch or mount the brackets.

Biggest problem would probably be that the pedals might not be well aligned making them feel kind of weird that they move opposite directions.
