If you have 5.83 gears, you do not want to go with a 7.50r16 tire, it's to small for the gear ratio, these trucks go slow enough. If you have 4.89 gears, you'd be ok with a 7.50r16 tire, but it places the axle housings closer to the ground, and personally, I would not use that small a tire.
You're limited to tires for a 6.5 wide rim, if you want to stay "safe." You can buy 900/85/16, or 255/100r16 ( the 900-16 equivalent), or 1100r16, or 10.5/85/16 tires that are 38 inches tall. You may not like the Chevron or Camel tread design of the 10.50-16, but it's a good off/on road tire and offers a little more road speed. Summit sells the 10.50/85/16 as well as some others.

Other tires are available that will mount on the rim, but they are designed for a wider rim. It doesn't mean they can't be used, but it places you outside the safe limit since mounting a tire designed for a wider rim on a narrower rim, changes the designed flex point of the tire.
