The 1100-16 Michelins are 37.5" tall installed on the truck. These tires would work great off road for your application.
No one makes 16" one piece production wheels with the 6 on 7-1/4 lug pattern. Your only option is expensive custom one piece wheels. Ouch.
You will have a far greater wheel selection, including many one piece 16" and many tubeless 16.5" wheels, with the 8 bolt lug pattern on the 1974 W300 axles, so that sounds like a very smart swap for you. New brake parts for 1974 axles are less expensive than custom wheels for 1961 axles. Later is generally easier to get parts for. Good luck!
