One under-cabinet plastic trashbin with the shiny inside surface, ~20-24" height.
One cardboard box about trashbin height.
Food bits.
Put the cardboard box next to the trashbin and put the food in the bottom of the trashbin. Leave. The mice will easily climb the cardboard, go into the trashbin after the food and be unable to get back out. The mice will be live and unharmed. Dispatch however one sees fit.
I found this out inadvertently and then did it intentionally. I caught dozens of mice this way in my garage before I had a good mouser move in.
