Full Flow Oil Filter vs Bipass Filter Questions....

OK experts...I have questions.
So I understand that our flathead engines are filtered using a bypass filter. They can easily be modified to run full flow filters but why would the filter assembly be different? Like why can't you just drill the oil journals as needed & re-plumb the lines to the factory oil filter assembly...or is that what guys are doing?
I ask because I was about to list this filter assembly on Ebay & when I looked up the part number, it's called a Full Flow assembly...what's the difference??
