The big trucks will shift either way but there is a real knack to getting the engine rpm estimated to ground speed for the shifting.
I would use the clutch in neutral to estimate engine speed in that gear. Try shifting up as you double clutch, much easier than down. Make sure your engine is idling correctly so it runs slowly when you are shifting up and it should go smoothly.
When you shift down let the clutch out in neutral and rev the engine to the estimated engine rpm as if it was in the gear you are going down to. Do it fast enough that your ground speed doesn't change much during the shift and give you another variable.
