Sometimes, when you remove sheet metal from around an engine, it actually disturbs the flow of cooling air through the radiator and around the engine.
But, in this case, I would put them back on, for originality if nothing else. It shouldn't be too hard to pound out a piece of sheet metal and it really doesn't make much difference as far as looks go. A sheet metal shop could probably bend one up pretty easily.
As I remember, there's one bolt on the driver's side shield (somewhere around the steering box) that is really tough to get to, even with the fenders off.
