Having had an ocean-going sale boat for years, I'm a semi-expert on varnish. The sad fact is that even the best marine varnish will not hold up for long if exposed to direct sunlight everyday. If you get six months before it needs to be re-done you will be lucky.
If you do a light sand just before the varnish begins to lose its gloss and then recoat it, you will be OK, But, it's a losing battle.
If the truck is kept inside, you can get years from a varnish job. Otherwise, the longest lasting finish will be paint.
If there was any varnish, epoxy or urethane or anything else that would hold up at any price, we sailors would know about it.
