I have taken many classes with mechanics/technicians who were undergoing the same "formal training/apprenticeship" in the industry that I was participating in as a (hold your nose and sneer) DIY'er. Not to paint with a broad brush, but many (most?) had very limited education and understanding of even the most basic scientific principals. Most learned by watching and doing.
Even the teachers, who were often very capable mechanics with years of experience, were often very limited. They were more than able to demonstrate the procedures, but their understanding of why something should or should not be done, or why it happened was often very limited.
You only need to take a few classes with dealership professional mechanics to understand that the average mechanic is not possessing any special mental skills.
