The Ocala National Forest is pretty cool. You can rent canoes and paddle through the swamp and see gators etc. Did it about 15 years ago with the family, and we didnt get eaten by anything. Alsop, the Kennedy Space Center was mentioned. It is a great place. If you read all the adds and billboards, it appears you need to buy tickets etc. It is a National site, and it is all free. Ignore all the attempts to get you to sign up for "guided tours etc, you dont need them.
Way further south, is the Dry Tortugas, definately on my bucket list.
Lots to do, even if you skip the big rodent and the other theme parks.
