A lot of thermostats are made with a little bleed hole already, I've always associated it as a bleed hole to allow any trapped air to bleed away and also as a safety in case the t/stat failed. A small hole like that will only have a very minor, almost negligible effect on the water flow. Think you are seeing the effects of the outside temperature.
