I know the kind of coil you are talking about. And, I wouldn't try that. I know my limitations ;)
This coil (picture), is simply insulated resistance wire wrapped around a bi-metallic strip. But, as you point out, the devil is in the details. If I could find the right wire or even renew the heat resistant coating on the old wire, I might be able to do it.
