Get the biggest you can fit and afford. I know in a perfect world on a bumper pull trailer 10% is the ideal tongue weight, but in the real world that just doesn't happen very much. Consider weight distributing hitches allow for more tongue weight, type of hitch such as pintle v/s ball. Good points have been made about accidentally dragging the jack, loading with the jack down, or having to shift loads without it connected to a tow vehicle, using it to help change a flat tire, etc.
Lastly safety, when a jack fails due to over weight it usually happens in a hurry without much warning.
