I believe the "5 ton" rating of those trucks is off-road with the tires aired down to 20 psi. The highway rating with 60 psi in the tiers is 10 tons, I believe. The reason for 8 wheels in the rear is flotation on soft ground, not highway load carrying capacity. Compared to a normal heavy truck with 100 psi in the tires, that low ground pressure makes for much better performance on soft ground.
Also, there's no inter-axle differential in the rear, which means that even though the regular differentials are open, you still would have to spin two rear wheels and one front wheel to get stuck, compared to just spinning one rear wheel in an ordinary dump truck.
