By the time grade 8 bolts fail, grade 5 bolts would have been long gone. That's why you pay more for grade 8 bolts.
Grade 8 bolts are less flexible, but that doesn't come into play until well after the grade 5 bolts would have failed.
Bolts usually hold by "clamping action" which is limited by the tensile strength of the bolt. That's why you should use higher torque with a grade 8 bolts to take advantage of the increased strength.
