I have never owned a new enough truck to have a factory 251 engine or its carburetor. I don't believe that they are that much more modern than the carbs I described that are used on Power-Wagons up through 1960.
If they carb has gone without attention for as you describe, I believe a good cleaning and replacment of worn/corroded parts is good preventative maintenance. I think you will find that you will not have to do anything special just because you may be using gasoline that has ethanol in it.
