If you want to do any towing, i'd keep the 727(there are overdrive kits out there for the 727 to improve your highway mileage), you should be able to pull that kind of weight on a well balanced trailer. One trick to towing heavy trucks like that is to back them onto the trailer to relieve some of the tounge weight. For now the body mount should, be no big deal, but the spring mount probably is, I'd try a chain binder from the axle to the frame behind the broken spring mount if it really has to be driven. Tilt steering from the early 80's should be a fairly simple swap, however I had all the confidence in the world in my 79 tilt and it never let me down. Finally, you may want third gear to tow right now, but as long as you don't have to go 90 and you don't mind using a little gas, I'd go ahead and use it as is. Keep in mind, these old Dodges are a lot tougher than most people give them credit for. If you ever want to hear some good offroading stories about late 70's Dodges, I'm a good one to ask, I've pushed about as hard and as fast as they'll go over some crazy obstacles.
