Here's how I've heard it. DOT4 has a higher boiling point (pointless for Joe 2-pack), but it will not mix with water AT ALL. This causes water seperation and all water in your brake lines will end up in low spots and just sit there rusting holes in things.

If you change brake fluid often or don't get water in your system, it's not an issue.

DOT3 has a lower boiling point, but actually mixes with water and prevents "pools" of water at low points.

For off-road applications where water intrusion might be possible, DOT3 seems best. DOT4 only if you need the higher boiling point and you are confident you won't ever get water in your system because you change it often (racers).
