Back in the day we used to be able to buy cams with different grinds for most any engine depending on how hot you wanted it. They used to be called names like "sports" 1/4 race, 1/2 race, etc. I haven't been involved in this sort of thing for many years, so no idea as to cost or availability. If memory serves, the last one I bought was about 1976 and cost me about $150. One place to look might be speed boating places as these engines were very popular for speed boats once.
There wouldn't be enough meat on a standard cam to regrind as you suggest - however - maybe you could look into changing the cam drive to gears and with an extra idler gear in there it would run the cam backwards - reverse rotation.
Another project for you might be to get involved with the cam spec changes over the years, to sort out which one has the best grind - some years were duds with one cylinder a fair bit different to the others, some have higher lift and different duration, some blocks have bigger valves and some have full flow oiling.
