In the past I have broken a few speedometers that way, but since I started using the method I show in the video that stopped happening.
My guess is that the center was more attached in some way or you got a little out of balance in your prying.
When I did break those off in the past I heated the center a little (most of the time the ones I broke were really rusty speedometers that had lost their glass 30 years ago) and pushed out the broken part with a torch tip cleaner held in a pair of pliers.
Once you have the bit of the shaft out of the center you can rebuild it with a new plastic disk.
To repair your speedometer you will need a new set of guts, but since you can use your odometer and everything else from your current speedometer finding just a usable guts should be easier.
