I went for an oil-based decking oil sealer over the figured mahogany I put in. It's a flat bed with a dump & I built some nice short sides for it when it's not loaded. Same wood on the sides. I used 5/4 wood. Once a year I give it a light wipe w/ 120 and re-coat, let it sit for 30 minutes, wipe it off and let it dry. It's been working a lot better than a varnish based finish, and it's 5 minutes to dress up any casual scratches. Repairs easy & keeps the water out of the wood. I got no regrets over a varnish sealer, and I was real concerned after putting that much money & work into the wood.
Penofin Penetrating Oil. Nothing like at a Home Depot. A good lumberyard will have a better selection of finishes anyway.
