Actually I would not take the truck down to bare metal . If the original paint is not checked you can leave it in place and use it as a base . The other top coats should be removed . I use a course grit wet and dry and sand until I cut into the original paint , get the surface level and then seal it with a top quality epoxy paint followed by the top coats .
I have never had paint problems going this route.
Rust , body work and chalked paint generally make stripping to bare metal a given .
