I am considering a 318 in my B3PW and wanting the same performance you are. My experience in road racing taught me that holleys do not work well with forces coming at them from multiple angles. Thermo-quads worked better. One interesting manifold design is the Offy duel port 360 manifold. It separates the primary and secondary runners and makes the primary runners smaller, increasing mix velocity and turbulance. It has been my experience that a lot of the speed/horsepower improvements can also increase milage if used correctly; i.e. balancing, windage tray, exhaust valve and runner shaping along with scavenging headers (shouldn't have trouble getting enough charge into the cylinders), cam (in this case a good economy grind).
A really trick ($$$) setup for extreme angle driving would be fuel injection and dry sump oiling.
Keep us informed on what you learn. As I said, I am thinking of the same performance characteristics as you are.
