I built a 318 for my 71 Charger. Its basically a stock bottom end with 20 over pistons. A cam and intake.
I put a .443 lift 280 duration cam in it. Made a big difference. The 318 has lots of low and mid power and torque. Thats what you want in a truck motor. I also put on a Mopar M1 dual plane intake and a Holley 600. The dual plane will also help your low and midrange torque needed for a truck.
Exhaust you can do what you want. Its not gonna make a big difference in your situation. Dual would be good with the 318 manifolds or headers if you can fit it in your truck.
Dont worry about oil pressure. 10 lbs per thousand rpms and thats all you need. Your 318 probably wont see 5000 rpms very often.
I dont know what you could do for severe angles. Maybe a windage tray or a pickup tube thats differnent. Not sure whats available for that application and the 318.
The Holley 600 will fit on the Mopar M1 intake but it needs a spacer. If I had to do it over again I would have got an EdleBrock as it would have fit down on the M1 just fine. The Holleys linkage hit the manifold.
Unless you are gonna race through a mudbog in 4 seconds the 318 is a real good motor for what I think you are wanting to do. Lots of low and mid range power, not to bad MPG and durable.
