My dad helped build the IU (Instrument Unit), the "ring" on top of the third stage you see falling away in the launch films.
The sad thing is when NASA was designing the J-2X motor for the ARES they sent young engineers down to the U.S. Space and Rocket Center to examine and make measurements of the Apollo rocket motors on display.
Almost 40 years have elapsed and that old technology still is the design target in heavy lift systems.
