When viewed from the side, a less angle on the end seems to help with grabbing. IIRC, it' the 'clearance angle', which should be only 3-4°. But when I hand sharpen, I tend to make that angle PLENTY, like 10° ? The lower angle will prevent rapid forward progress, helping with the digging in.
