All the pole buildings I've built have no concrete around the poles, just dig a hole and backfill, of course good material like gravel is best. Like everyone said if you're going to enclose the stucture and pour a concrete floor someday, you might want to consider "grade beam" construction. Basically put sonotubes under each post to a depth below frost, then connect the top of them all with a reinforced grade beam say 12x12. This will give the floor something to butt to and close off the space. Basically it'll look like full foundation when done, but at a fraction of the cost. The only catch is good material. If there is clay, dig it out and place stone or gravel under the grade beam, it'll heave if it gets wet and freezes. The grade beam is a good way of achieving the benefit of a full foundation without all the concrete.
