Have you ever tried using a curing mixture on your turkeys before smoking? I use a salt/sugar/pepper mix on mine. I rub the mix on the outside and inside of the turkeys, put them in a container for a few days. After 3 or 4 days I put more cure on them. The process takes a couple of weeks , longer if it is below freezing. (you want to make sure the outside temp is below 35F, or keep it in the refrigerator). After the curing process, I smoke them. The result is delicious. JH
