There were many different industrial engine applications. Some engines used for electrical generators only ran at one speed depending on the generator attached to it and some even used cast iron pistons.
I have reground my cams and shaved the heads a couple times. The last 251 engine was a real performer afterwards.
How much you can shave the heads depends on your valve clearance. I checked my clearance with playdough and shaved .080 for about/around a point in compression. I have never experienced a head gasket problem either.
