I don't know all that much about converting M-37's (although I would like to have one), but I do have experience with running a '69 318 at those kind of revs. My W500 has a 318-3 and it spins at around 2850 at 60mph. No problem at all.
On the other hand, you don't really need those revs with your "lightweight" truck. If I were you, I would go for those 4.89's.
