I'd stay away from the wet sponge method as it will introduce rust. Moisture on sheet metal will cause it to flash pretty fast. Get a little moisture in a small area of a weld and you could have rust very quickly. One little spot would allow things to fester and over time you could get some rust under the paint or filler and cause problems. If you are concerned with heat a air hose is much safer to just blow some air on the area to cool it down. If you are welding or grinding enough to produce enough heat to start warping I would say you are doing too much and need to slow down. Its not uncommon to take hours to weld a big panel in as you do a little at a time in various spots. Allow to all cool and do some more. These old trucks have some pretty heavy sheet metal and warping it would require massive amounts of heat compared to the other stuff built even 20 years later.
