Maple Syrup is packed at 190 degrees. Kept in a cool place, it will have the same shelf life as any canned goods you buy in the store. My own opinion, use it up before 5 years. On opening older Maple, you may notice crystal in the neck area. This is only crystallized sugar from long storage. Nothing wrong at all, its nice to crunch the crystals. The Maple in your ice box will be fine in long storage, again, you may see some sugar crystals.
