Nick, as I mentioned, Never remove and install the same U Bolt/Nut, Never.
Go to any quality truck spring shop. They can make New U Bolts for you. You will also be given Deep Nuts and Hardened flat washers for each nut. Get your U Bolts a little longer than needed, you can cut off the excess after your done with the install. Better to buy a little to long than be to short. Never use lock washers, as they increase friction and make a proper torque impossible. Ask the spring shop for the correct torque value for their U Bolts and if that Torque Value is for a lubricated or dry U Bolt. You will then be good to go.
After you have driven a few hundred miles, re-torque to the specified torque.
